So this is “to die” for guacamole.  I am serious… don’t plan on eating anything else or sharing for that matter.  This is my Dominican daughter in law’s recipe – so it is authentic!

What you need:

2 large, ripe avocados

large bunch of cilantro (adjustable to taste)

2 large, soft limes – roll and then cut to squeeze

1 small red onion

Salt

Mortar and pestle and food processor

What you do:

In a food processor combine the onion and cilantro.  Sprinkle a little salt and finely chop.

Slice avocados in half, remove pit and scoop out of skin into the mortar.  Grind with the pestle until mostly smooth, leaving some small “chunks” of the avocados.

Mix ⅔ of the onion mixture using the pestle to combine.  Squeeze limes for maximum juice and mix into  avocados, onions and cilantro.

Now the fun begins… because you get to taste, just little bites so you have enough to eat when you are done, and adjust the mixture to your personal tastes by adding more onion/cilantro mixture and sprinkles of salt.  You can add more lime juice if you desire.  The more cilantro and lime, the more flavorful it will be. If you have onion and cilantro left over, save it and use it to cook with your next piece of meat.

You can certainly eat this right away OR you can make ahead and allow it to season.  After all, most things are better the second day!

Serve with salty tortilla chips/scoops.
